Nibs -The Heart of Cacao
A common question we get about nibs is "what do you do with them?" We love to snack on them and get creative - try these ideas at home:
Mother Mary ~ homemade granola with nibs
Ginger ~ banana-nib bread
Jessica & Demaris ~ chocolate covered strawberries with Xocolatl nibs
Ruby, Chris & Jessica P ~ plain nibs in a local organic salad
Frederick ~ saute plain nibs in soup stock
Jeff ~ Organic vanilla ice cream with Chocolate Covered or Xocolatl nibs
Melissa ~ Pumpkin-nib bread. Take plain nibs on trail runs as a non-melting chocolate energizer
You can also make your own chocolate by grinding plain nibs and sugar in a high grade juicer such as Champion or Juiceman. A mortar and pestle also works.
For a bittersweet chocolate, use more sugar than nibs, such as 75% nibs and 25% sugar. For a semisweet, increase the sugar and decrease the nibs. Your final creation will be rustic but delicious!
