Pumpkin Ice Cream Pie with Chai Chocolate Chunks

Ingredients:

  • 1 quart vanilla ice cream
  • 1 cup canned pumpkin
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • 2 Dagoba Chai chocolate bars
  • 1 9-inch graham cracker crumb crust

Method:

  1. Allow ice cream to soften approximately 1 hour.
  2. Mix pumpkin, brown sugar, spices, and coarsely chopped chocolate bars in large bowl.
  3. Fold in softened ice cream.
  4. Spread pumpkin ice cream mixture in pie shell; freeze at least 1 hour until solid.
  5. Slice and serve.
